GOT SALSA?
OKAY YA’LL I’m not really sure if this is considered a salsa or salad or what but i’ll tell ya what it is considered… DELICIOUS!
But seriously this is one of my favorite go to side dishes or even sometime main dishes because it’s seriously that good! I kind of eye ball the ingredients for this one but I’ll give you some measurements that would serve about 6 people. I found this recipe on veganhuggs.com just so you don’t get the wrong idea and think I made it up lol BUT I did change some of the ingredients for my own personal preference!
Ingridients:
Salsa
2 15oz cans of black beans
2 avocados
2 cups of corn
2 cups of cherry tomatoes (halved)
1/2 cup of red onion, diced
1/3 cup of cilantro
Dressing
1/3 cup lime juice
3 tablespoons olive oil
1 teaspoon maple syrup
2 tablespoons chopped cilantro
1/2 teaspoon minced garlic
1/2 teaspoon chili powder
1 teaspoon sea salt and pepper
What you’re gonna do is mix all the ingredients for the salsa together, EXCEPT for the avocado. Leave that for the end. Then whisk all the dressing ingredients together. Pour the dressing onto of the salsa and to top it all off add the avocado! And boom ya done. So simple so easy and so delicious. I like to eat this with chips of course. This recipe is really like the perfect summer dish but honestly I eat it year round and its so good!
